brown sugar, almond
& orange short bread
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 cup (packed) golden brown sugar
- 2 cups all purpose flour
- 1/4 cup finely ground almonds
- 1 tablespoon finely grated orange zest
- 1/4 teaspoon salt
1. Preheat oven to 325F.
2. Using electric mixer, beat 1 cup butter in large bowl until light and fluffy. Add brown sugar and beat well. Using a rubber spatula, mix in flour, almonds, orange zest and salt
(do not overmix)
3. On a cutting board or work surface, roll out dough to 1/8-inch thickness, and cut out shapes with cookie cutters or the rims of various-size cups to make circles. The dough can also be rolled out in logs, chilled well, then sliced into disks.
4. Place the cookies on ungreased baking sheets, sprinkle with coarse sugar, if desired, and bake until lightly golden, about l5 minutes. Allow cookies to cool slightly, then transfer to racks to cool completely.
